Onboard food leftovers processor: solid-state fermentation (SSF) with filamentous fungi

The Challenge

Forbes reported that Norway's cruise industry reached an all-time high in 2023, with 4,000 ships bringing 5.5 million passengers to ports across the Norway. This represents a 29% increase compared to previous years.A typical cruise ship carrying around 2,000 passengers can generate six tons of food waste daily.

Our Solution

We develop an innovative process or machine that converts food leftovers into livestock or fish feed via solid-state fermentation (SSF) using filamentous fungi.Since the input material is food-grade, the resulting product also remains food-grade, making it a high-quality feed option for fish and livestock. Solid-state fermentation is a traditional method used in fermented foods like tempeh, requiring minimal space and relatively little water compared to submerged cultivation. This makes SSF particularly suitable for shipboard application.
